Crostini with Burrata and Confit Tomatoes in EVO Oil

A simple and refined recipe that enhances the quality of Calabrian extra virgin olive oil. Perfect as an appetizer to impress your guests.

Crostini con Burrata e Pomodorini Confit all'Olio EVO

Ingredients (for 4 people)

  • 8 slices of homemade bread
  • 2 fresh burrata cheese
  • 300g cherry tomatoes
  • 4 tablespoons of Calabrian EVO oil
  • Fresh basil to taste
  • Fleur de sel to taste
  • 1 clove of garlic

Preparation

  1. Cut the cherry tomatoes in half and arrange them on a baking sheet. Season with EVO oil, salt and basil. Bake in a 120°C oven for 1 hour until the cherry tomatoes are confit.
  2. Toast the bread slices in the oven or on a grill until golden brown. Rub lightly with garlic.
  3. Arrange a generous portion of hand-cracked burrata on each slice.
  4. Add confit cherry tomatoes, a generous drizzle of Calabrian EVO oil and a few fresh basil leaves.
  5. Top with a pinch of fleur de sel and serve immediately.
