LAMB SHOULDER WITH SALMON

Ingredients:
For 4 persons:
- 1 shoulder oflamb
- 100 gr. lamb meat
- 1 small tin of salmon
- 3 eggs
- Salt, pepper
- Sage powder

First prepare the stuffing with the minced slice of lamb meat, salmon and two eggs that you have firmed up also minced. Add salt and pepper, a little sage powder and bind the stuffing with the other remaining egg that has just been beaten. You will have bought the lamb shoulder boneless and not rolled, put the prepared stuffing in the middle, roll it up as you usually do for roasts, tie it carefully and roast it in a hot oven for about 45 minutes. Serve it with pureed spinach.
