ESCALOPES WITH MARSALA

Ingredients:
For 4 persons:
- 400 gr. slices of veal thinly sliced
- 50 gr. butter
- 2 fingers of marsala wine
- Flour, salt and pepper.

Take a wide, shallow baking dish, put the butter in it and when it is well browned arrange on it in a single layer the slices that you have first dipped in a layer of flour. Cook, turning them on both sides over high heat, season them with salt and pepper, douse them with marsala, let them season a few more minutes and serve hot with their sauce.
