FLEMISH-STYLE SHOULDER OF LAMB
Ingredients:
- 1 shoulder 1 kg approx.
- 2 baby onions
- Butter, salt and pepper
- 1 tablespoon flour
After washing and drying it well, cut the shoulder into thin pieces about three fingers wide. Chop two baby onions, sauté them with butter and when they have taken on a nice red color add the lamb and season with salt and pepper. Wait until the meat begins to color, then add another small piece of butter soaked in flour. Stir and let it take on a nice color, finish cooking by adding a little at a time of the hot broth. Serve it with the cooking sauce.
