Method
Step 1 — Soaking and preparation
- Soak 250 g of dried Borlotti Beans in cold water for at least 12 hours, changing the water halfway: a good soak shortens the cooking time and makes the beans more digestible.
- Drain, rinse and set aside. Finely chop the onion, carrot and celery.
Step 2 — Cooking the beans
- In a tall pot, pour 1.5 litres of cold water with the soaked beans and the bay leaf.
- Bring to a boil, lower the heat and simmer for 40-45 minutes, skimming occasionally: the beans should be soft but not falling apart.
- Towards the end of cooking, add the salt.
Step 3 — The soffritto and the finish
- In a wide casserole, gently sauté the onion, carrot and celery with 2 tablespoons of EVO oil and the garlic cloves in their skins, for 8-10 minutes over a gentle flame.
- Add 2 ladles of beans with some of their cooking liquid and mash them with a spoon to create the natural cream that thickens the soup.
- Add the remaining beans with the broth, stir in the tomato pulp (if you prefer it redder) and cook for 10 minutes.
- Add the orecchiette and finish cooking in 10-12 minutes, adding hot water if needed.
- Turn off the heat, remove the garlic, adjust salt and pepper, and finish with the chopped rosemary and a generous drizzle of raw olive oil.
