Modica Chocolate Pudding with Caramel Sauce

Description

A spoon dessert celebrating Cioccolato di Modica IGP, one of the world's finest chocolates. The creamy, intense pudding is enhanced by a golden caramel sauce that adds sweetness and complexity. A perfect finale for an important dinner party.

Ingredients

  • 200g Modica IGP chocolate
  • 500ml whole milk
  • 3 egg yolks
  • 80g sugar
  • 30g cornstarch
  • For the caramel: 150g sugar, 80ml fresh cream, 30g butter

Preparation

  1. Melt Modica chocolate in hot milk over low heat.
  2. Whisk the egg yolks with the sugar and starch. Pour the chocolate milk in a trickle while stirring.
  3. Cook over medium heat, stirring constantly until the pudding thickens. Pour into molds and let cool in the refrigerator for 3 hours.
  4. Prepare caramel: melt sugar in pan until golden brown, add hot cream and butter stirring quickly.
  5. Unmold pudding and serve with warm caramel sauce.
