Pork Tenderloin in Flower Honey with Baked Potatoes

Description
An elegant and surprisingly simple main course: pork tenderloin marinated with Calabrian flower honey, rosemary and garlic caramelizes in the oven, creating an irresistible golden crust. New potatoes soak up all the juices of the meat for a restaurant-like result.
Ingredients
- 800g pork tenderloin
- 3 tablespoons Calabrian flower honey
- 2 cloves of garlic
- Fresh rosemary to taste
- 4 tablespoons Calabrian EVO oil
- 600g new potatoes
- Salt and black pepper to taste
Preparation
- Mix honey, EVO oil, minced garlic, rosemary, salt and pepper. Marine the tenderloin for at least 30 minutes.
- Cut new potatoes in half and season with oil, salt and rosemary.
- Arrange the tenderloin and potatoes in a baking dish. Bake in a 200°C oven for 35-40 minutes, brushing with the marinade every 10 minutes.
- Let the meat rest 5 minutes before slicing. Serve with the potatoes and marinade.
