Codfish Calabrese style with Olives, Capers and Tomatoes

Description
Calabrian-style salt cod is a traditional poor man's dish that has become the star of gourmet cuisine. The fish cooks slowly in a sauce rich with black olives, capers, tomato and chili peppers, absorbing all the flavors of the Mediterranean. A second course that tells the story and soul of Calabria.
Ingredients
- 800g cod already soaked
- 400g peeled tomatoes
- 100g Calabrian black olives
- 30g salted capers (rinsed)
- 1 golden onion
- 2 cloves of garlic
- 4 tablespoons of Calabrian EVO oil
- Calabrian chili pepper to taste
- Fresh parsley to taste
Preparation
- Cut the codfish into pieces and dry well. Flour it lightly and brown it in EVO oil on both sides. Set aside.
- In the same pan sauté onion and garlic. Add crushed peeled tomatoes, olives, capers and red pepper.
- Cook the sauce for 10 minutes, then lay the cod in the pan. Cover and cook over low heat for 20 minutes.
- Serve with plenty of chopped fresh parsley and toasted homemade bread.
