Pork Tenderloin in Flower Honey with Baked Potatoes

Description

An elegant and surprisingly simple main course: pork tenderloin marinated with Calabrian flower honey, rosemary and garlic caramelizes in the oven, creating an irresistible golden crust. New potatoes soak up all the juices of the meat for a restaurant-like result.

Ingredients

  • 800g pork tenderloin
  • 3 tablespoons Calabrian flower honey
  • 2 cloves of garlic
  • Fresh rosemary to taste
  • 4 tablespoons Calabrian EVO oil
  • 600g new potatoes
  • Salt and black pepper to taste

Preparation

  1. Mix honey, EVO oil, minced garlic, rosemary, salt and pepper. Marine the tenderloin for at least 30 minutes.
  2. Cut new potatoes in half and season with oil, salt and rosemary.
  3. Arrange the tenderloin and potatoes in a baking dish. Bake in a 200°C oven for 35-40 minutes, brushing with the marinade every 10 minutes.
  4. Let the meat rest 5 minutes before slicing. Serve with the potatoes and marinade.
