Baked Lamb with Potatoes and Calabrian Black Olives

Description
Baked lamb is the dish of great occasions in Calabrian tradition. The tender, fragrant meat is slow-cooked with golden potatoes, Calabrian black olives and herbs, creating a rich and satisfying main course that brings the authentic flavors of Southern Italy to the table.
Ingredients
- 1.5kg lamb pieces
- 800g potatoes
- 150g Calabrian black olives
- 4 cloves of garlic
- Fresh rosemary and thyme to taste
- 6 tablespoons Calabrian EVO oil
- 200ml dry white wine
- Salt and black pepper to taste
- Calabrian chili pepper to taste.
Preparation
- Marinate the lamb with EVO oil, garlic, rosemary, thyme, salt and pepper for at least 1 hour.
- Cut the potatoes into wedges and season with oil, salt and rosemary.
- Arrange the lamb and potatoes in a large baking dish. Add the black olives and deglaze with white wine.
- Bake at 180°C for 90 minutes, turning the meat halfway through cooking and adding a little water if necessary.
- Serve hot with the cooking juices and homemade bread.
