Sea Bass in Salt Crust with Seasonal Vegetables

Description
Salt-crusted sea bass is a cooking technique that preserves all the juices and flavors of the fish, keeping it extraordinarily soft and fragrant. Breaking the crust at the table is a scenic moment that makes this dinner unforgettable.
Ingredients
- 1 800g-1kg whole sea bass
- 1.5kg coarse salt
- 2 egg whites
- Lemon, rosemary, thyme
- Seasonal vegetables: zucchini, asparagus, carrots
- Extra virgin olive oil
Preparation
- Mix coarse salt with egg whites until a sandy consistency is obtained.
- Stuff the sea bass with sliced lemon, rosemary and thyme.
- Spread half the salt in a baking dish, lay the fish on top and cover completely with the remaining salt. Bake in a 200°C oven for 30-35 minutes.
- Grill the vegetables seasoned with oil and salt. Break the salt crust at the table and serve with the vegetables.
