Description
An unusual and mouthwatering breakfast that combines the tradition of the Italian frittata with the sweet flavors of fresh ricotta and Calabrian bergamot marmalade. Fluffy, fragrant and ready in 20 minutes: the gourmet breakfast you don't expect but can't get enough of.
Ingredients
- 4 fresh eggs
- 150g fresh ricotta cheese
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- Peel of half a lemon
- 1 tablespoon butter
- 3 tablespoons extra bergamot marmalade
- Powdered sugar for decoration
Preparation
- Beat eggs with sugar, vanilla and lemon zest. Incorporate the sifted ricotta cheese, stirring gently.
- Heat the butter in a nonstick skillet over medium heat. Pour in the mixture and cook with a lid on for 5-6 minutes.
- Gently flip the frittata and cook another 3-4 minutes until golden brown.
- Serve hot with plenty of bergamot marmalade and a sprinkling of powdered sugar.
