Description

Calabrian ricotta and honey cake is a traditional Southern Italian peasant dessert that is simple but extraordinarily good. The fresh, creamy and delicate ricotta cheese goes perfectly with the intensely scented, floral Calabrian flower honey. A soft and fragrant cake that wins you over at first taste, perfect for breakfast or as an after-dinner dessert.

Ingredients

  • 500g fresh sheep's milk ricotta
  • 4 tablespoons of Calabrian flower honey
  • 3 eggs
  • 150g sugar
  • 200g 00 flour
  • 1 sachet of baking powder
  • Rind of 1 organic lemon
  • A pinch of salt

Preparation

  1. Preheat the oven to 180°C. Butter and flour a 24-cm cake pan.
  2. Beat the eggs with the sugar until light and fluffy.
  3. Add the sifted ricotta, honey, lemon zest and a pinch of salt. Mix well.
  4. Incorporate the sifted flour with baking powder, stirring gently from the bottom to the top.
  5. Pour the mixture into the cake pan and bake for 45 minutes. Check the baking with a toothpick. Let cool and serve with a drizzle of honey.
