Description
Calabrian ricotta and honey cake is a traditional Southern Italian peasant dessert that is simple but extraordinarily good. The fresh, creamy and delicate ricotta cheese goes perfectly with the intensely scented, floral Calabrian flower honey. A soft and fragrant cake that wins you over at first taste, perfect for breakfast or as an after-dinner dessert.
Ingredients
- 500g fresh sheep's milk ricotta
- 4 tablespoons of Calabrian flower honey
- 3 eggs
- 150g sugar
- 200g 00 flour
- 1 sachet of baking powder
- Rind of 1 organic lemon
- A pinch of salt
Preparation
- Preheat the oven to 180°C. Butter and flour a 24-cm cake pan.
- Beat the eggs with the sugar until light and fluffy.
- Add the sifted ricotta, honey, lemon zest and a pinch of salt. Mix well.
- Incorporate the sifted flour with baking powder, stirring gently from the bottom to the top.
- Pour the mixture into the cake pan and bake for 45 minutes. Check the baking with a toothpick. Let cool and serve with a drizzle of honey.
