Put two eggs, the flour and the milk in a saucepan, mix well and cook for about ten minutes over the heat, then add the sugar, the grated rind of a lemon and lastly, but off the heat, the two yolks. Mix and spread the cream on a marble slab, when it is cold cut it into diamond shapes that you will flour, pass in beaten egg and then in breadcrumbs. Fry a little at a time in hot extra virgin olive oil and serve covered with icing sugar.
