A rustic and invigorating soup of chickpeas, beans and lentils, served with toasted homemade bread and a drizzle of raw oil. A poor man's dish from the Italian peasant tradition, rich in vegetable protein and authentic flavor.
Ingredients
200g boiled chickpeas
200g boiled borlotti beans
150g red lentils
1 carrot, 1 celery stalk, 1 onion
2 cloves of garlic
400g peeled tomatoes
Rosemary, sage, bay leaf
Extra virgin olive oil
Homemade bread for serving
Preparation
Sauté the chopped onion, carrot and celery in plenty of oil. Add the garlic and herbs.
Add peeled tomatoes and cook 10 minutes.
Add all legumes and cover with water or vegetable broth. Cook on low heat for 30 minutes.
Adjust salt to taste. Serve with toasted homemade bread and a drizzle of raw oil.
