Description
A traditional Calabrian pasta dish that wins you over at first taste. Orecchiette perfectly picks up the rustic Calabrian spicy sausage ragout with fresh cherry tomatoes. A simple, authentic dish full of character that brings the truest flavors of Southern Italy to the table.
Ingredients
- 400g fresh or dried orecchiette pasta
- 300g seasoned Calabrian sausage
- 300g cherry tomatoes
- 1 golden onion
- 2 cloves of garlic
- 4 tablespoons Calabrian EVO oil
- Fresh basil to taste
- Grated Calabrian pecorino cheese to taste
- Chili pepper to taste
Preparation
- Remove the casing from the sausage and crumble it. Sauté in EVO oil with chopped onion and garlic for 5 minutes.
- Add cherry tomatoes cut in half and chili pepper. Cook over medium heat for 15 minutes until a thick sauce is obtained.
- Cook orecchiette pasta in plenty of salted water, drain when al dente and toss in the sauce.
- Serve with plenty of grated pecorino cheese and fresh basil leaves.
