Ingredients for 4 people: - tender eggplants: 1 kg - breadcrumbs: 200 g - grated cheese: 200 g - eggs: 3 - parsley, garlic, oil, salt and pepper to taste
Peel and cut the eggplants into pieces and boil them. When they are cooked, drain them and squeeze them well. At this point put them in a bowl with the cheese, breadcrumbs, eggs, parsley and garlic finely chopped, salt and freshly ground black pepper. Mix everything together and then make meatballs that you will fry in plenty of olive oil.
