Crostini with Burrata and Confit Tomatoes in EVO Oil
A simple and refined recipe that enhances the quality of Calabrian extra virgin olive oil. Perfect as an appetizer to impress your guests.

Ingredients (for 4 people)
- 8 slices of homemade bread
- 2 fresh burrata cheese
- 300g cherry tomatoes
- 4 tablespoons of Calabrian EVO oil
- Fresh basil to taste
- Fleur de sel to taste
- 1 clove of garlic
Preparation
- Cut the cherry tomatoes in half and arrange them on a baking sheet. Season with EVO oil, salt and basil. Bake in a 120°C oven for 1 hour until the cherry tomatoes are confit.
- Toast the bread slices in the oven or on a grill until golden brown. Rub lightly with garlic.
- Arrange a generous portion of hand-cracked burrata on each slice.
- Add confit cherry tomatoes, a generous drizzle of Calabrian EVO oil and a few fresh basil leaves.
- Top with a pinch of fleur de sel and serve immediately.
