Description

Chicken cacciatore is a traditional Italian country dish: pieces of chicken slowly braised with tomatoes, olives, capers and rosemary, served on a bed of soft parmesan polenta. A rustic, comforting meal that warms the heart.

Ingredients

  • 1 whole chicken cut into pieces
  • 1 onion, 2 cloves of garlic
  • 400g peeled tomatoes
  • 100ml red wine
  • Black olives, capers, rosemary
  • Extra virgin olive oil
  • For the polenta: 250g cornmeal, 1L water, salt, butter, parmesan cheese

Preparation

  1. Brown chicken pieces in hot oil. Add chopped onion and garlic; deglaze with red wine.
  2. Add tomatoes, olives, capers and rosemary. Cook covered on low heat for 45 minutes.
  3. For polenta: bring salted water to boil, pour in flour by sprinkling, stirring constantly for 40 minutes.
  4. Cream with butter and Parmesan cheese. Serve chicken over soft polenta.
