Chicken Cacciatora with Soft Polenta

Description
Chicken cacciatore is a traditional Italian country dish: pieces of chicken slowly braised with tomatoes, olives, capers and rosemary, served on a bed of soft parmesan polenta. A rustic, comforting meal that warms the heart.
Ingredients
- 1 whole chicken cut into pieces
- 1 onion, 2 cloves of garlic
- 400g peeled tomatoes
- 100ml red wine
- Black olives, capers, rosemary
- Extra virgin olive oil
- For the polenta: 250g cornmeal, 1L water, salt, butter, parmesan cheese
Preparation
- Brown chicken pieces in hot oil. Add chopped onion and garlic; deglaze with red wine.
- Add tomatoes, olives, capers and rosemary. Cook covered on low heat for 45 minutes.
- For polenta: bring salted water to boil, pour in flour by sprinkling, stirring constantly for 40 minutes.
- Cream with butter and Parmesan cheese. Serve chicken over soft polenta.
