Baked Salmon with Herb Crust and Roasted Potatoes

Description
Salmon fillets with a crispy herb crust, served with golden roasted potatoes. A light, elegant and omega-3 rich dinner, ready in less than 45 minutes. The crust of breadcrumbs and herbs creates a perfect contrast to the softness of the salmon.
Ingredients
- 4 fillets of fresh salmon
- 2 tablespoons breadcrumbs
- Fresh parsley, dill, thyme
- 1 lemon (zest and juice)
- 2 cloves of garlic
- 4 medium potatoes
- Extra virgin olive oil, salt and pepper
Preparation
- Preheat the oven to 200°C. Cut potatoes into wedges, season with oil, garlic, salt, and pepper, and bake for 25 minutes.
- Mix breadcrumbs, chopped herbs, lemon zest and oil.
- Arrange salmon fillets on a baking sheet and top with the herb crust.
- Bake for 15 to 18 minutes. Serve with roasted potatoes and lemon wedges.
