Codfish Calabrese style with Olives, Capers and Tomatoes

Description

Calabrian-style salt cod is a traditional poor man's dish that has become the star of gourmet cuisine. The fish cooks slowly in a sauce rich with black olives, capers, tomato and chili peppers, absorbing all the flavors of the Mediterranean. A second course that tells the story and soul of Calabria.

Ingredients

  • 800g cod already soaked
  • 400g peeled tomatoes
  • 100g Calabrian black olives
  • 30g salted capers (rinsed)
  • 1 golden onion
  • 2 cloves of garlic
  • 4 tablespoons of Calabrian EVO oil
  • Calabrian chili pepper to taste
  • Fresh parsley to taste

Preparation

  1. Cut the codfish into pieces and dry well. Flour it lightly and brown it in EVO oil on both sides. Set aside.
  2. In the same pan sauté onion and garlic. Add crushed peeled tomatoes, olives, capers and red pepper.
  3. Cook the sauce for 10 minutes, then lay the cod in the pan. Cover and cook over low heat for 20 minutes.
  4. Serve with plenty of chopped fresh parsley and toasted homemade bread.
