Calabrian Curved Sausage with Aspromonte Potatoes and Peppers

Calabrian Curved Sausage is a unique product in the world: spicy, aromatic, with a horseshoe shape that makes it unmistakable. Paired with yellow-fleshed Aspromonte Potatoes and red peppers, it becomes a rustic and satisfying main course, perfect for a family dinner.
Ingredients
- 4 Calabrian Curved Sausages
- 600 g Aspromonte yellow-fleshed potatoes
- 2 red peppers
- 1 Tropea onion
- 3 garlic cloves
- Calabrian extra virgin olive oil to taste
- Fresh rosemary
- Calabrian chili pepper to taste
- Salt and pepper to taste
Method
- Preheat the oven to 200°C.
- Peel the potatoes and cut into wedges. Cut the peppers into strips and the onion into rings.
- In a roasting pan, arrange the potatoes, peppers and onion. Season with olive oil, garlic, rosemary, salt and pepper.
- Place the Curved Sausages on top of the vegetables.
- Roast for 40-45 minutes, turning halfway through, until golden.
- In the last 5 minutes, activate the grill for a crispy crust.
- Serve hot directly from the pan.
Tips
Aspromonte Potatoes are famous for their compact yellow flesh and intense flavor: they do not fall apart during cooking and magnificently absorb the sausage juices. Pierce the sausages with a toothpick before roasting to prevent them from bursting. A complete dish that needs no additional sides.
