Dark Chocolate Cake with Mascarpone Cream and Raspberries

Description

This dark chocolate cake is a true sin of gluttony. The soft, moist cocoa base is filled with a luscious mascarpone cream and decorated with fresh raspberries and chocolate chips. Perfect for special occasions, birthdays or for a sophisticated dessert that leaves a lasting impression.

Ingredients

  • 200g quality dark chocolate
  • 150g butter
  • 200g sugar
  • 4 eggs
  • 100g flour 00
  • 30g bitter cocoa powder
  • 1 sachet baking powder
  • 250g mascarpone cheese
  • 100g powdered sugar
  • 200ml fresh cream
  • 200g fresh raspberries
  • Dark chocolate chips for decoration

Preparation

  1. Melt dark chocolate with butter in a double boiler. Let cool.
  2. Beat eggs with sugar until light and fluffy. Incorporate the melted chocolate.
  3. Add sifted flour, cocoa and baking powder. Stir gently.
  4. Pour into a buttered and floured cake pan. Bake at 170°C for 30-35 minutes. Let cool completely.
  5. Prepare the cream: whip the mascarpone with the powdered sugar, then incorporate the whipped cream.
  6. Cut the cake in half, fill with the mascarpone cream and reassemble. Decorate with fresh raspberries and chocolate chips.
