A light and nutritious lunch: farro with grilled vegetables, feta and olives, dressed with extra virgin olive oil and lemon. Spelt from Calabria, with its rustic flavor and texture, is the ideal ingredient for colorful and flavorful summer salads.
Ingredients
- 250g pearl spelt
- 1 zucchini
- 1 red bell bell pepper
- 1 small eggplant
- 150g Greek feta cheese
- Black olives to taste
- Extra virgin olive oil, lemon, oregano, salt and pepper
Preparation
- Cook farro in salted water for 25-30 minutes, drain and let cool.
- Slice the vegetables and grill them on a hot griddle.
- Season farro with oil, lemon juice, oregano, salt, and pepper.
- Combine the grilled vegetables, crumbled feta cheese, and olives. Stir and serve at room temperature.
