Crostini with Crème de Bergamote and Ricotta

The crostini with the cream of bergamote and ricotta are a refined and surprising entrée, combining the delicacy of the fresh ricotta with the unique citrus scent of the bergamote from Reggio Calabria.
Ingredients
- 250 g of fresh ricotta
- 2 c. à soupe de jus pur de bergamote
- Zeste d'1 bergamote
- 2 c. with honey soup from Calabrian fleurs
- Sel et poivre noir à volonté
- 8 tranches of rustic pain or baguette
- Extra Calabrian olive oil à volonté
- Feuilles de menthe fraîche pour garnish
Preparation
- Grill the portions of pain in four at 180°C for 5 minutes.
- Put the ricotta into the fourchette until you get a cream.
- Ajouter le jus de bergamote, le zeste, le honey, sel et poivre. Bien mélanger.
- Tartiner généreusement la crème sur les crostini.
- Finish with a filet of oil and some slices of food.
- Server immediately.
