A fragrant summer first course that celebrates the flavors of the Mediterranean: fresh basil pesto, sweet cherry tomatoes and creamy burrata. The quality of the artisanal pesto and extra virgin olive oil make all the difference in this simple yet extraordinary recipe.

Ingredients

  • 320g pasta (trofie or linguine)
  • 1 bunch of fresh basil
  • 50g grated parmesan cheese
  • 30g toasted pine nuts
  • 1 clove of garlic
  • 80ml extra virgin olive oil
  • 200g cherry tomatoes
  • 1 fresh burrata cheese
  • Salt and pepper

Preparation

  1. Blend basil with parmesan cheese, pine nuts, garlic, and oil until a creamy pesto is obtained.
  2. Cook pasta in plenty of salted water and drain when al dente.
  3. Season with the pesto, adding a little cooking water.
  4. Plate with the cherry tomatoes cut in half and the burrata broken in the center. Finish with a drizzle of oil and black pepper.
