Calabrian Curved Sausage with Baked Aspromonte Potatoes

La Calabrian Curved Sausage is considered unique in the world for its balance of select pork, Calabrian chili peppers and artisanal spices. Paired with the Aspromonte yellow-fleshed potatoes, with its intense flavor and perfect texture, creates a rustic, fragrant and authentic main course that tells of Calabria in every bite.

Ingredients

  • 600 g of Calabrian curved sausage
  • 800 g yellow-fleshed Aspromonte potatoes
  • 1 red onion from Tropea
  • 4 tablespoons of Calabrian extra virgin olive oil
  • Wild rosemary to taste.
  • Calabrian chili pepper q.b.
  • Salt to taste.

Proceedings

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and cut them into wedges. Slice the red onion into rounds.
  3. Arrange potatoes and onion in a baking dish, season with EVO oil, rosemary, salt and chili.
  4. Lay the curved sausage on the baking sheet between the potatoes.
  5. Bake for 40-45 minutes, turning halfway through baking, until golden brown.
  6. Serve hot straight from the pan.

Tips

For perfect cooking, prick the sausage with a toothpick before baking: the fat will distribute over the potatoes, making them even tastier. Add a few black Calabrian olives to the pan for an extra touch of flavor.
