Description

Salmon fillets with a crispy herb crust, served with golden roasted potatoes. A light, elegant and omega-3 rich dinner, ready in less than 45 minutes. The crust of breadcrumbs and herbs creates a perfect contrast to the softness of the salmon.

Ingredients

  • 4 fillets of fresh salmon
  • 2 tablespoons breadcrumbs
  • Fresh parsley, dill, thyme
  • 1 lemon (zest and juice)
  • 2 cloves of garlic
  • 4 medium potatoes
  • Extra virgin olive oil, salt and pepper

Preparation

  1. Preheat the oven to 200°C. Cut potatoes into wedges, season with oil, garlic, salt, and pepper, and bake for 25 minutes.
  2. Mix breadcrumbs, chopped herbs, lemon zest and oil.
  3. Arrange salmon fillets on a baking sheet and top with the herb crust.
  4. Bake for 15 to 18 minutes. Serve with roasted potatoes and lemon wedges.
