Calabrese Curvy Sausage with Aspromonte Potatoes and Peppers
The Calabrian Sunday main course
Calabrese Curvy Sausage is a unique product: spicy, aromatic, with a horseshoe shape that makes it unmistakable. Paired with yellow Aspromonte potatoes and red peppers, it becomes a rustic and satisfying second course, perfect for a family dinner.
Ingredients
4 Calabrian Curved Sausages
600 g yellow Aspromonte potatoes
2 red peppers
1 Tropea onion
3 garlic cloves
Calabrian extra virgin olive oil to taste
Fresh rosemary
Calabrian chili pepper to taste
Salt and pepper to taste
Preparation
Preheat the oven to 200°C.
Peel the potatoes and Cut them into wedges. Slice the peppers and the onion into rings.
In a baking dish, arrange the potatoes, peppers, and onion. Season with extra virgin olive oil, garlic, rosemary, salt, and pepper.
Place the Curved Sausages on top of the vegetables.
Bake for 40-45 minutes, turning halfway through, until golden brown.
In the last 5 minutes, turn on the broiler for a crispy crust.
Serve hot directly from the baking dish.
Tips
Aspromonte Potatoes are famous for their firm yellow flesh and intense flavor: they don't fall apart during cooking and absorb the sausage juices beautifully. Prick the sausages with a toothpick before baking to prevent them from breaking. A complete dish that doesn't need any additional side dishes.
